Background:
Ianto Jones was born in the South of Wales to a predominantly welsh speaking family. He later attended the University in London where he was an average student.
Ianto's father owned a tailor shop in Cardiff where Ianto worked during summers and he learned the fine art of tailoring and an eye for fine detail. Later, he took up a series of temporary jobs, (including coffeeshop barista), before landing a job as a junior researcher at Torchwood 1 in London where he met his late girlfriend, Lisa Hallett.
After Torchwood 1 was destroyed during the "Battle of Canary Wharf," Ianto took an extended sick-leave due to mental stress from losing his girlfriend, (actually he was trying to take care of Lisa after her partial conversion by the cybermen.) In trying to take care of his injured lover, Ianto approached Jack Harkness about coming to work at the Torchwood 3 Cardiff Branch. After a series of interesting encounters, the Torchwood leader finally relented and hired him as 'general staff'. His duties included manning the fake tourist office above the Hub, serving refreshments to the team, fixing the messes after missions and "cleaning up the shit...no questions asked."
After finding out about Ianto keeping Lisa in the hub basement when she escaped and killed two civilians and almost killed Ianto himself, Jack fired and threatened to Retcon him, but gave Ianto a second chance. Free from the biggest secret he kept from the team, Ianto opened up and became the defacto second-in-command under Gwen Cooper during Jack's brief absence with The Doctor.
Upon Jack's return to the Hub, he made Ianto a full-fledged field operative. Ianto and Jack have since started a romantic sexual relationship.
Personality:
Ianto is pleasant, well mannered, reserved and soft-spoken. He is a man of few words and has a dry, dark sense of humor that sometimes comes out at the most inopportune moments.
Ianto has a taste for finely tailored suits and the finest coffees and teas. He broods easily when hurt and tends to hold in his feelings and retreats to himself.
He is not the smartest person in the hub but probably the most resourceful in a crisis. He tends to overthink things and prefers planning before action.
Deep down he is a hopeless romantic and loves dining in fancy restaurants, watching old movies and taking long walks on rainy nights.
How are they involved with Torchwood:
Ianto is the silent 'backbone' of the team. He mans the tourist office guarding the main entrance, takes care of the staff's needs, and tries his best to keep Jack out of trouble. He is the 'general staff' of the team and cleans up the messes and hides the bodies with little complaint. He is also the chief archivist in charge of the day-to-day cataloging of rift artifacts and repatriation officer in charge of returning rift victims to their rightful place in timespace or helping to find them new homes.
Roleplaying Sample:
Ianto just wanted to keep to himself in the kitchen. He was still too angry to talk to Jack and was glad the man had his back to him in the office window. He just wanted to clean up the morning's collection of empty coffee mugs and tea cups and clean the expresso machine.
The Welshman felt eyes on him and looked across the hub to find Gwen staring back forlornly. He shot her a half-hearted smile as he worked, but she didn't return it. Her expression appeared strained with her own repressed anger at the man in the office. At least they shared that.
He almost wished Owen would appear out of nowhere and toss a half rotting alien appendage on his immaculate counter just to break up the monotony, but the young doctor was in sickbay brooding at the man upstairs as well.
Toshiko kept to herself as usual. But he could see by the tense way she held her shoulders she would hit the roof if someone yelled "boo." His dark, humourous side almost made him want to do just that as he stared at her back while drying a cup.
It was a bad day in the hub and, as he turned to wipe down the expresso machine, he mused to himself how he just wished it would end. The rift alarm suddenly sounded, breaking him from his thoughts and telling him otherwise.

As you can see, I did extensive research on this character for my Torchwood crossover novella, "Time's Arrow." Ianto is a rich and complex character and an author's dream to write for.
